Mouthfeel

Mouthfeel describes the tactile experience in the mouth: its texture, body, and the way the liquid distributes itself and coats the palate. A whisky can be oily and creamy or light and dry, and the experience arises from the interaction between alcohol strength, filtration, and cask aging.

Characteristics of mouthfeel

  • coating, i.e., a thin layer that remains on the palate

Factors that influence mouthfeel

  • Alcohol strength (ABV): high ABV increases warmth and body and can accentuate a noticeable coating; at the same time, high alcohol can dry the mouth and alter the balance of the experience.
  • Filtration: cold filtration removes certain proteins and lipids; unfiltered whisky often retains more oil and a smoother coating, but glass clarity can vary.
  • Barrel aging and wood profile: oak from different barrels contribute to aroma and mouthfeel. ex-bourbon oak often provides a stronger body and sweeter tones, while casks from sherry or other wines impart tannins and more complex notes, as well as often a longer finish.
  • Glycerol and other components: glycerol contributes to a smooth and creamy sensation; the amount of such compounds affects coating and warmth in the mouth.
  • Water and temperature: adding water or changes in temperature can alter viscosity and coating and thus the mouth's perception.
  • Dryness and tannins: dry sensations often arise from tannins in the wood and can give a tight or astringent finish.

Relation to taste and finish

The mouthfeel supports and colors the experience of flavor and finish. A thick, creamy coating can make sweetness and vanilla feel more rounded, while a sharp or dry finish can cause spices and bitterness to come forward more clearly. The interplay between body, warmth, and coating contributes to the overall balance of the whisky.
