Fino/Manzanilla Cask
Fino- and Manzanilla-casks refer to casks that were previously used for aging or finishing sherry of the Fino and Manzanilla types. Both varieties are light and dry, and they give the whisky a light, dry profile with salty and nutty notes, as well as a pronounced maritime/mineral edge.
Characteristics - Color: typically very light to light golden; minimal color development in the whisky. - Aroma: salty notes such as salted almonds; nutty elements such as almonds and hazelnuts; light citrus and green apple notes; bread and toasted nuances from the cask. - Taste: dry, fresh and light-bodied; notes of almond, hazelnut and bread; mineral/salty touch; low sweetness and a dry, persistent finish. - Mouthfeel: light to medium body, lively acidity, low to mid tannin.
Production and influence - The flor layer in the sherry cask contributes to a delicate oxidative/solera-character, but Fino and Manzanilla are particularly dry and light; the cask provides only modest colour transfer and preserves essential freshness in the whisky. - Color development in the whisky is minimal, helping to maintain a bright, fresh style.
Applications in whisky - Suitable for light, delicate whiskies as well as maritime/coastal styles. - Can be used as a finish for short periods (from a few months up to around a year) to impart salinity, nutty notes and a dry finish without dominating the whisky. - Ideal for whiskies that already have fruity-driven or woody notes, as it creates a balance between freshness and dryness.
Overall assessment - Fino- and Manzanilla-casks bring salty, nutty and dry tones as well as a light mineral character, making them particularly suited to light to mid-bodied whiskies with a maritime character.
