Strength Cask

Shaved, Toasted & Re-charred wine casks (Jim Swan method) is a technique for reusing used wine casks in whisky production. The method enhances the intensity of oak notes and adds fruity elements as well as vanilla without overpowering the distillate.

Procedure - Shaving: a thin shaving surface is removed from the inside of the wine cask to remove part of the previous aging and expose fresh oak. - Toasting: the inside is lightly toasted, which develops aromas and facilitates the interaction between the wine's and the oak's characteristics. - Re-charing: the inside is re-charred by heating, so a new charcoal layer forms and a new surface for contact with the whisky.

Effect on flavor and aroma - Fruity notes such as red berries and other fruit nuances, often accompanied by vanilla and a creamy mouthfeel. - Vanilla, caramelization and caramel tones from the oak's new contact, with potential for spice and light smoke. - The overall profile is typically more complex and often longer in finish than with uncharred wine casks.

Applications and considerations - The STR treatment is used to impart fruitiness and vanilla through the use of ex-wine casks and to refresh a cask without overpowering the distillate. - Benefits: enables reuse of existing casks and adds new oak and fruity depth. - Considerations: results vary with the cask history and the whisky; the process requires careful control to balance fruit, vanilla and oak notes.
