Ice water
Definition
Ice water is water mixed with ice, used to dilute whisky when serving. It includes both cases where whisky is poured over ice and the meltwater added to the glass, as well as situations where the guest themselves adds cold water from a jug or bottle outside the ice. The purpose of ice water is to lower the alcohol content in the liquid while simultaneously affecting the mouthfeel and aroma, particularly with certain whiskies.
Sensory and chemical effect
Reducing the ethanol concentration changes the relative volatility of the volatile aroma compounds in the whisky. Light dilution can open fruity, floral, or spicy notes and make heat and the alcohol burn more pleasant. Too much dilution dampens the character and can make the whiskey appear more watery than rich. The exact effect depends on whiskey types, strength, and malt complexity.
Cooling and melting
Ice water contributes to colder serving. The water in ice water typically sits around 0–4°C and melts gradually, providing a slow, controllable dilution. The slow melting gives the flavor and aroma phase time to react and change profile during the meal or tasting.
Practical application
There are two common approaches to using ice water when serving whisky: - Whisky over ice with meltwater: Whisky is poured into a glass with one or more ice cubes; as the ice melts, water is added slowly, resulting in gradual dilution. - Ice water on the side: A jug with cold water and ice is placed at the table, and the guest adds water to the whisky as needed. This gives greater control over dilution and aroma development.
Recommendations for beginners and advanced
- Start gently: add a small amount of water and wait 30–60 seconds for aromas and mouthfeel to develop. Repeat as needed in small amounts.
- Consider whisky type: lighter, more delicate whiskies can benefit more from a low to moderate dilution, while stronger, bolder whiskies often tolerate or benefit from greater dilution.
- Ice choice: large ice chunks or blocks melt more slowly and provide more controlled dilution than small ice cubes.
