The cellar master is the person in a distillery or whisky cellar responsible for aging whisky in casks and for managing the maturation process. The role encompasses both technical and administrative tasks and requires insight into casks, environmental conditions and flavor development.

  • Responsibilities:
  • Planning and optimization of cask selections and their placement in the warehouses to achieve the desired aging and flavor profiles.
  • Monitoring the environmental conditions in the cellar, including temperature, humidity and ventilation, and adjusting the storage environment to promote uniform aging.
  • Selecting and assigning casks to specific batches or age profiles in collaboration with the master blender.
  • Quality control and sampling during aging: recording color development, aroma and flavor, and documenting development progress and any deviations.
  • Care and maintenance of casks and containers: inspection for leaks, damage or faults, maintenance of casks and handling of procurement and replacement casks.
  • Documentation and traceability: keeping logbooks and databases with cask, batch and aging data, and ensuring compliance with internal standards and external requirements.

  • Collaboration and decision-making processes:

  • Works closely with the master blender and other departments such as production, quality control and inventory management to ensure consistency in flavor profile and delivery reliability.
  • Participates in decisions about maintaining or changing aging profiles and cask programs.

  • Competencies and qualifications:

  • Experience with warehouse logistics and handling of casks, a keen eye for detail and consistency in the aging process.
  • Analytical abilities, organizational skills, and knowledge of food and beverage legislation and safety procedures.
  • Practical understanding of climate and storage conditions in cellars, as well as the ability to diagnose and solve problems.
