New Make Spirit

New Make Spirit is the freshly distilled, unaged spirit that arises directly after the final distillation and before barrel aging. It typically has an alcohol strength around 65–70% ABV and is colorless, with no influence from wood.

Production: After fermentation of a grain-based mash, the raw spirit is distilled to preserve the grain and fermentation characteristics. The resulting spirit typically lies in the 65–70% ABV range and is produced without early barrel aging.

Sensory: The aroma and taste show notes of fruit such as pear and apple, combined with pronounced grain notes and fermentation characteristics. The flavor is warm and alcoholic with fruity and grainy elements; the finish is often short and sharp before barrel aging.

Usage in whisky production: As the starting point for maturation in oak barrels, New Make Spirit forms the base for the development of color, aroma, and complexity in the final whiskies.

Handling and safety: The high ABV requires proper storage and handling to avoid fire hazards and skin or eye contact.
