Spirit Safe

Spirit Safe is a locked measuring and distribution cabinet used in traditional whisky distilleries to control and document the cuts of the distillate. The cabinet acts as a monitoring and control point between the distillation process and the final receivers, so that the main fraction (Hearts), as well as the smaller fractions (Heads and Tails), can be distributed in a controlled and recorded manner.

Description

Spirit Safe is normally a cabinet with a glass facade or visible pipes, providing a direct view of the outlet from the boiler. Internally there are separate outlet paths and swiveling boxes or valves (cocks), which allow controlling the movement of the distillate to different containers. Built-in measuring devices such as a hydrometer/alcoholmeter and a thermometer enable assessing the alcohol strength and the temperature in each fraction before it leaves the cabinet. The cabinet is locked, and handling of the cuts requires authorization, ensuring a legal and controlled process.

All measurements and volumes are recorded in a logbook and checked against applicable requirements and legislation. The allowances of Spirit Safe allow the distiller to adjust the cuts without breaking the law, as access to changing the apparatus is conducted under the supervision of an authority or an authorized person.
