Column Still

Column still (kolonnestill) is a continuous distillation apparatus typically built as a long column equipped with a number of distillation plates or packing. It allows repeated rectification in one pass and provides a higher alcohol strength and a lighter, less aromatic profile than pot stills, properties that make it particularly suitable for grain whisky.

  • Structure and operation: A classic column consists of a stripping column and a rectifying column. Steam is generated in a reboiler and rises through the column, while the liquid is fed and moves downward as reflux. Each plate or packing acts as a theoretical stage, providing separations between light and heavy components. The column maintains a controlled reflux ratio and temperature profile, making it possible to produce crude distillate with high ABV in a continuous process.

  • History: The first practical continuous distillation system was developed as the Coffey still or Patent still in the early 1830s. The Coffey still provided a higher ABV in the crude distillate and made large-scale production more economical, which greatly redefined whisky production, particularly for grain whisky.

  • Applications and profile: Column stills are primarily used for grain whisky and other spirits production, where a stable production and a clean base are desired. The crude distillate typically has a high alcohol strength (typically around 90-95% ABV) and a relatively neutral profile, which can later be shaped through the addition of water and maturation to a smoother profile. Compared with pot stills, the column still provides a more uniform base with less pronounced fruity esters and phenols, making it easier to achieve a consistent flavor for blends.
