Cask Finishing

Definition

Cask finishing, or finishing in secondary barrels, is a short-term post-maturation of whisky in a secondary barrel after the initial maturation in a larger wooden cask. The secondary barrel has often previously held wine or dessert wine and contributes new aromas, color, and flavor nuances.

Formål

The purpose of finishing is to add further complexity and balance to the whisky by allowing it to absorb components from the secondary cask and its previous contents. Since the cask also influences the wood’s structure and added tannins, the nuances such as fruit, spices, vanilla, and sweetness, as well as the overall mouthfeel, are altered.

  • Wine casks (red and white): impart fruity notes and a pleasant roundness.
  • Sherry casks (Fino, Amontillado, Oloroso): add nuts, dark fruit, and hints of caramel.
  • Port and Madeira casks: contribute deeper sweetness and dark fruits along with warm spices.
  • Rum and cognac casks: add tropical notes, pepper and licorice, as well as a touch of sweetness.
  • Bourbon or other whisky casks: can impart vanilla and caramel over a crisp woody profile.

The finishing period is typically relatively short compared with primary aging and often ranges from a few weeks to several months. Many finishes fall in the 2–12 month range, depending on the desired intensity and the cask’s previous contents. Longer finishes affect color, aroma and flavor more markedly.

  • The choice of cask type affects the whisky's final character; don't expect finishing to change the core characteristics of the overall profile.
  • For powerful or disproportionately sweet impressions, a short finish can be more balanced than a longer one.
