Low wines
Low wines are the distillate obtained after the first distillation of the fermented liquid (wash) in a pot still. Typically, the ABV of low wines is in the range of 20–30%. This distillate serves as input for the next distillation round (second distillation) in a spirit still, where it is further separated into fractions. During the second distillation the distillate is divided into three fractions: the heads, the heart, and the tails. The heart is the portion that becomes the spirit and is later aged into whisky. The heads and tails can be discarded or recycled back to the distillation round. Low wines are thus an intermediate product in the production between fermentation and aging.
