Character Level

Char Level refers to the degree of charring of the inside of an oak cask used for storage and maturation of whisky. The scale runs from 1 to 4 (from light to strong charring). Deep charring is formed by burning the wood's inner surface and creates a carbon layer, which affects how the wood's compounds exchange with the spirit. The level influences color, aroma and flavor profile after aging.

Significance and measurement method

Char level describes how deeply the burning has changed the surface of the wood. The levels are generally set by the producer and the cask type, but often follow a shared understanding.

Levels

• 1 – Lightly charred: The surface has a light charring; provides moderate color development and a mild introduction to the wood's flavors.

• 2 – Medium-charred: The depth provides more color and clearer wood notes such as vanilla and light caramel; more structure in the taste.

• 3 – Heavily charred: Deeper caramel- and toast-notes; deeper color, more pronounced wood character and a more defined mouthfeel.

• 4 – Alligator-char: The deepest charring, often called alligator-char; characterized by a deep, ridged surface and a strong carbon layer that provides intense contact between the wood and the spirit; flavors and color are very pronounced with notes of caramel, roasted notes and spice.

Influence on the whisky's character

• Color: The higher the level, the deeper and more intense color development.

• Aroma: Lighter levels yield delicate vanilla and caramel notes; higher levels contribute to more pronounced wood notes, roasted and smoky elements.

• Taste: Increased wood character, sweetness and complexity at higher levels; level 4 often provides stronger tannins and a more pronounced dryness.

• Mouthfeel: Increased body and structure at higher levels; the sensation of wood and character is intensified.

• Filtration: The carbon layer in strongly charred casks can help remove certain unwanted compounds and smooth out individual components.

Applications and preferences

Char Level influences the choice of cask for different whisky styles and maturation environments. Light to medium char is often used in lighter whisky styles and delicate maturations, while strong and alligator-char is preferred in potent and complex whiskies, where depth and intensity are central. The choice of char level should be tailored to the desired balance between fruit, sweetness, spice and wood notes.
