About the distillery

Wolfburn is located in Thurso in Caithness on the rugged north coast of Scotland and is known as the northernmost distillery on the Scottish mainland. Here, the whisky is distilled, matured, and bottled on site, and the site builds directly on the legacy of the original Wolfburn, which was founded in 1821. History

Wolfburn’s history begins in 1821, when William Smith founded a distillery on the outskirts of Thurso and named it after the burn that supplied the site. In 1823, the distillery received its first license to distil, and only a few years later production had grown significantly; in 1826, 27,500 gallons of Wolfburn whisky were made, and in the early 1800s the distillery appeared as the largest malt whisky producer in Caithness. Operations continued in the Smith family until at least the 1850s, but around 1858 the distillery closed, and both stills and the mash tun were sold at auction. For more than one and a half centuries, the site remained inactive until a new Wolfburn was planned in 2011, built in 2012, and put back into spirit on Burns Night in January 2013. From there, a rapid rebuilding of identity followed: the first peated spirit was laid down in casks in 2014, Northland arrived as the first single malt in 2016, and in the following years both maturation, visibility, and export grew. In 2021, the distillery marked its 200th anniversary with an exclusive limited-run release.

Ingredients and production

Wolfburn makes single malt Scotch whisky produced entirely on site in Thurso. The distillery uses premium, sustainably sourced malt from British growers, and the malt is described as a non-GM and non-GN variety. The whisky is double-distilled and bottled without chill filtration and without artificial colouring. Fermentation takes place with one yeast strain, bottom-fermented, and is described as long and unfazed/unstirred to develop deep, layered flavour nuances before distillation. The water is drawn from the Wolf burn, a spring close to the distillery, and is naturally filtered through Caithness stone. Production is organised as grain to glass in Thurso, where each bottle is monitored from distillation to final filling and dispatch. Wolfburn also describes a process that is kept in place by traditional methods, but with modern precision and a clear emphasis on balance and consistency.

Maturation and cask types

Maturation takes place in Wolfburn’s traditional dunnage warehouses by the sea in Caithness. The source mentions in particular first-fill ex-bourbon barrels from Kentucky, second-fill and first/second-fill Oloroso sherry butts from Spain, rum casks from the Caribbean, as well as custom re-coopered quarter casks from Islay Cooperage in Speyside. The 12-year-old whisky matures in equal parts second-fill Oloroso sherry butts and ex-bourbon casks, while Cognac Cask-Finished first rests in bourbon casks and then gets six months in selected Cognac casks. It is a maturation program that seeks both depth and balance, as well as a clean line from the wood’s character to the finished whisky.

Whiskies

The core range includes 12 Year Old, 10 Year Old, Northland, Aurora, Morven, and Langskip. The 12-year-old is the flagship, the 10-year-old is the first permanent age statement, Northland functions as the flagship release, Aurora is sherried, Morven has a light peated note, and Langskip is bottled at a higher strength. In addition, there are relevant special releases such as Cognac Cask-Finished and the collaborative release Horse Soldier, showing the distillery’s willingness to work with different cask profiles without compromising the underlying style. Overall, the range stands as a set of whiskies where sherry, bourbon, light smoke, and higher strength create clear variations within the same northern house style.

Style and flavour profile of the whiskies

Wolfburn’s whiskies clearly focus on floral sweetness, honey, and malt, as in the 12-year-old version, where sweet and floral aromas meet honey, burnt sugar, and sherry sweetness. The fruit character repeats in ripe orchard fruits, baked apple, pear, dried fruit, and citrus zest—especially in the Horse Soldier release. At the same time, there is a consistent layer of spice: soft spices, cinnamon, nutmeg, and oak spice, and several whiskies add an extra hint of vanilla, butterscotch, and toasted oak. In the peated expressions, a very light smoke comes through more as a discreet note than as a dominant feature.
