Raw materials and production
The production is characterized by deliberate, concrete choices. Maris Otter malt is the core raw material, and the distillery itself emphasizes that it prioritizes flavor over alcohol yield. The malted barley is carried into the distillery by hand and mixed with local Highland water in one of Scotland’s smallest mash tuns. Fermentation lasts 144 hours, which is unusually long and allows good time to develop complexity in the wash. Distillation takes place slowly and intentionally, and the cuts are determined by taste rather than by ABV.
