Joadja Distillery is located in the Southern Highlands in New South Wales and combines a small visitor site with the production of single malt whisky, gin, liqueur, rum, brandy, and other spirits. For whisky lovers, it’s especially interesting that the house works with both ex-bourbon and several types of sherry casks, giving the range a clear and vinous direction. Weekend opening with a free tour and tastings makes it easy to experience up close.

Raw materials and production

Joadja works with single malt whisky and uses barley as the grain base in the documented whisky releases. The production is closely tied to cask work, where ex-bourbon, ex-Oloroso sherry, ex Pedro Ximenez, ex Moscatel sherry, and ex Amontillado sherry all appear in the range. Several bottles are labeled paddock to bottle, showing an awareness of traceability and a direct connection between distillery and bottle. The distillery also produces other spirits such as gin, anise liqueur, rum, brandy, vermouth, and vodka, but the whisky profile clearly comes through via single malt and the many cask-driven expressions.

Maturation and cask types

Maturation focuses especially on earlier bourbon and sherry casks, and that’s exactly where Joadja finds its character. Ex-bourbon provides a clean, classic framework in the more straightforward single malt expressions, while the sherry family ranges from Oloroso to Pedro Ximenez, Moscatel, and Amontillado. There’s also a specially marked approach to special batches and signature releases, telling you that the casks are used for different small, delimited releases rather than for a consistent standard range. The way the releases are named makes the type of cask the carrying element in the maturation story.

Whiskies

The whisky range is centered on single malt whisky in several cask expressions. The core appears to be a bourbon-cask bottled expression, supplemented by various sherry-influenced versions such as Oloroso, Pedro Ximenez, Moscatel, and Amontillado. In addition, there is a limited release under the name Warramunga Whisky Ex Bourbon Cask Paddock to Bottle, as well as several single releases linked to particular batches or anniversaries. The range seems small, but clearly differentiated—the identity is carried more by cask selection and release format than by age or raw material variation.

The style and tasting profile of the whiskies

The flavor direction is above all sweet, sherry-driven, and fruity. The anise liqueur is described as soft and sweet with a creamy texture and spiced notes of liquorice, showing a clear axis of sweetness and spice in the house’s spirit style. In the whiskies, Oloroso, Pedro Ximenez, Moscatel, and Amontillado point toward dry, vinous, fruity, and full-bodied directions, while ex-bourbon provides a more classic, clean base. Taken together, it paints a picture of a distillery where the casks set the tone very clearly.

Visit the distillery

Joadja Distillery can be visited on Saturday and Sunday from 10am to 4pm, and there are free distillery tours and tastings. No booking is required; just show up. Visitors can bring a picnic and sit under cover or on the grass, as long as there is space for the distillery’s guests. There are currently no planned Historic Site Tours, and you can contact the venue by phone or via email for practical questions.
