Short about the distillery
Sall Whisky Distillery is located in East Jutland and produces organic single malt and single farm whiskies with full traceability. Every barley processed at the distillery comes from Lars’s organic fields, and the distillery distills in-house from field to bottle. There is particular focus on the distillery’s own character — collected in the core range styles MULD, TØRV and GLØD — as well as on smoking with Jutlandic moss peat and maturation in fortified wine casks.
History
Founding and local drive
The distillery was created by 7 young men from the area and focuses on production and raw materials from the local, organic soil in Jutland.
Raw materials and production
The raw materials are their own local organic produce, and the whisky is made from grain that is processed at the distillery. In the core range series the style’s focus is guiding: MULD aims to preserve much of the distillery character and thereby limits the influence of the cask. This includes, for example, 2nd-fill casks, where both interactive and reductive maturation get space. TØRV is about smoking: the malt is smoked with peat, and the distillery uses Danish moss peat to smoke the malt, supplied by Tørvebisserne in Moseby in Northern Jutland. GLØD, on the other hand, is maturation-driven with fortified wine casks, where there is always an element of aging in casks that previously held wine.
Maturation and cask types
MULD works with a cask strategy where 2nd-fill casks and used casks are allowed to play an active role in development over time. The distillery also highlights the value in older whiskies from well-used casks with good room for esterification. TØRV may have been matured in different cask types, but the core of the style is the smoking of the malt with Jutlandic moss peat. GLØD always involves fortified wine casks, and the distillery tries to select “old wood”, i.e. casks with a long history of wine maturation, rather than casks produced quickly with so-called seasoning.
Whiskies
The core range series at Sall Whisky is organized into three styles: MULD, TØRV and GLØD. Each style is released in batches with clear batch numbers (MULD 1.1, 1.2; TØRV 2.1, 2.2; GLØD 3.1, 3.2), so you can follow the development between releases. In addition to the core range, they also work with a Distillery Edition series and other special concept bottlings in half-liter bottles, but these are mainly described as series categories in the overall product narrative.

Visit the distillery
You can book a tour and a tasting at Sall Whisky, where time is set aside for both production and tasting. The experience lasts two hours and includes seeing and discussing the productions as well as tasting 4 drams (1 cl. each). Sall Whisky emphasizes that the whisky is created from their own local organic raw materials in the heart of Jutland, with full traceability from field to bottle. Production is built around deliberate style choices: MULD works to preserve distillery character and use casks that do not overpower, while TØRV anchors the style in a particular type of peat for smoking the malt. GLØD always has fortified-wine maturation, and the distillery prioritizes “old wood” over casks produced more quickly for industrial purposes.
Sustainability
The raw material comes from Lars’s organic fields, and the whisky is based on their own local organic raw materials.
In connection with the establishment of a new tipi for tastings, the distillery has received subsidies from the EU.
