Briefly about the distillery
Nyborg Distillery is located by the harbor in Nyborg in the old railway workshops, which for 125 years housed Danish State Railways’ freight train workshop. Today it is a family-owned, organic distillery with whisky, gin and aquavit, a shop, a restaurant and guided tours. It is especially interesting for whisky lovers, because the whisky here is based both on local Funen malt and on experiments with new expressions in the Adventurous Spirit series.
History
The buildings that now house Nyborg Distillery were, for 125 years, a workshop for Danish State Railways’ freight trains. When the Great Belt Bridge opened, the workshop closed its entire 4,000 m2 facility, and for more than 13 years it stood empty and slowly deteriorated. In 2011, Nicolai and Niels Rømer took over the buildings with the idea of creating something new within the old framework. As early as 2009, they had taken the first steps and experimented with organic whisky, rum and gin at their brewery in Ørbæk. After several years of restoration, Nyborg Distillery was inaugurated on Saturday, June 10, 2017, and at the same time a restaurant, café and shop opened in the historic buildings at Holmens Boulevard 11. Today the distillery is part of Naturfrisk Group and operates as a family-owned distillery.
Raw materials and production
Nyborg Distillery works with organic spirits and uses local Funen malt for the unpeated whisky. The large copper stills stand in the distillation hall, where guests can follow the processes from the start of production to the finished product. Whisky, gin and rum are produced, and the distillery also describes its own gin, rum, vodka, aquavit and liqueur as part of the range. In addition, spirits are supplied for ready-mixed cocktails, which are bottled at Ørbæk Brewery, and the distillery also produces private label products. The concrete fermentation, mashing and distillation setup is not described in more detail, but it is clear that the craft is tied to organic raw materials, local ingredients and production taking place in the middle of the restored industrial buildings.
Maturation and cask types
The whisky matures in the warehouse hall in the old workshop buildings, where casks of other spirits are also standing around the hall. The distillery works with many kinds of casks, and a special example is Nyborg Aquavit Christmas, which is based on a caraway aquavit aged for at least one year in oak casks. Those casks have previously held bourbon whisky, Nyborg Distillery’s own Isle of Fionia whisky, Ørbæk Symbiostout and later Ørbæk Symbiostout Christmas. This gives a clear picture of a house that uses casks actively and lets previous contents become part of the flavor development.
Whiskies
The range consists first and foremost of whisky under Nyborg’s own name, including the unpeated whisky and the more experimental Adventurous Spirit series. In addition, there is a broader selection of organic spirits such as gin, rum, vodka, aquavit and liqueur. The whisky story seems to run on two tracks: one part is rooted in local malt and a classic Danish production, while the other seeks new paths and aims to create whisky that has not been made before. This makes the range relevant both for those seeking a pure spirit with Danish roots and for those curious about more experimental releases.

The whiskies’ style and flavor profile
Nyborg’s flavor profile ranges from fresh and herbal to warm and cask-driven. In the aquavits, dill, coriander seed, sea buckthorn, caraway, orange peel, flowers and thyme recur, while peppermint and eucalyptus give the liqueur a deeper, menthol-like direction. The cask-aged part of the range draws on vanilla, caramel, citrus, herbs and the warmth of oak. Overall, it points to a style where freshness, spice and soft sweetness are allowed to balance one another.
Visit the distillery
The distillery can be visited, and there is both a shop, restaurant, café, guided tours and tastings. The shop has fixed opening hours and can also be opened outside those times if staff are on site, but there may be a waiting time because the restaurant staff also serve the shop. Guided tours are available for larger groups, and interested parties can contact the distillery at rundvisning@nyborgdestilleri.dk. The historic site, the large warehouse hall with whisky casks and the old locomotive are part of the experience.

They choose to work with Funen malt for the unpeated whisky and use their own buildings as an active part of the story and production.
