About the distillery

Mosgaard Whisky is located at Nordager 15 in Kolding, where the distillery shares an address with Trolden Distillery and Brewery. Here they produce organic Danish whisky and gin from Danish raw materials with a clear emphasis on purity, fruitiness and precise cask management. In particular the 7 Sisters series and the newer special releases show how Mosgaard works with sherry casks, bourbon casks and peated expressions.

History

Mosgaard Whisky began in 2015 with a series of experiments on malt types and yeast combinations to find the style that gave the cleanest and most fruity new spirit. In 2017 the distillery filled seven casks with new spirit in converted 30–40 year-old Oloroso sherry casks, adapted to 140 liters. That became the starting point for the 7 Sisters series, which has since become Mosgaard’s first age-stated series. Oloroso was also the basis for the first release in 2019. In the years after, the distillery has expanded its range with both peated and sherry-influenced bottlings, and in 2024 Mosgaard itself highlights a major triumph at the World Whiskies Awards with four category winners, including one named World's Best. In 2025 the casks in the 7 Sisters series were moved to the new address in Kolding, and in 2026 new special releases and cask fill-ups were added.

Raw materials and production

Mosgaard works with Danish organic barley malt, and the grain is grown for the distillery in Thy National Park at Gyrup, which also malts according to Mosgaard’s specifications. The distillery describes its single malt as built around sweetness, softness and fruit notes. Fermentation takes place in fermentation tanks with a special yeast, and the wash is left for a minimum of one week so the yeast can work steadily. This gives a wash of around 8–8.5% ABV and a distinct fruity character. Distillation is double: first a strip-run to low wines and then a spirit run, where head, heart and tail are separated. The spirit run lasts 11–12 hours, and the handmade copper stills are designed by Jes Mosgaard to provide strong reflux and effective cleansing against the copper. Heads and tails are saved for the next distillation so nothing goes to waste.

Maturation and cask types

Aging ranges from classic ex-bourbon quarter casks to specially built casks of Oloroso, Pedro Ximenez, Palo Cortado, Port and Virgin Hungarian oak. In the 7 Sisters series converted Oloroso sherry casks are used, which previously held 40-year-old sherry, and the series is released as single casks over many years. Mosgaard also works experimentally with double maturation, as in Cask Experiment #4, where peated whisky first spent four years in ex-bourbon quarter casks and then two years in Manzanilla sherry casks. In the newer releases the cask’s previous contents and wood type clearly influence how the whisky develops.

Whiskies

The range spans from the aging 7 Sisters series to standalone special releases such as Oloroso Cask, Pedro Ximenez Cask, Palo Cortado Cask, Port Wine Cask, Peated / Bourbon Cask, Dark Peat Cask and Cask Draw Sample. 7 Sisters is the most prominent series with year and age statement, while the other releases show the distillery’s work with sherry, port, bourbon and peat. It is a range dominated by single malt, where each cask is allowed to set a clear course for the individual whisky.

Whiskies' style and tasting profile

Mosgaard’s whiskies move in a style with pear, apple, citrus and orange peel on the lighter end and with raisins, dried fruit, nuts, caramel and dark chocolate in the more mature casks. The peated releases add peat smoke, heather, tar, vanilla and creamy toffee. The overall impression is marked by fruity purity, malt, sweetness and a clear cask depth.

Visit the distillery

Mosgaard can be visited in the shop at Nordager 15 in Kolding, where you can buy whisky and gin and taste at the counter. Opening hours are usually weekdays from 8 to 15 and Fridays from 8 to 17, where there is also an open Friday bar from 14 to 17. The distillery encourages contacting them before your visit so there is good time to receive guests.

Philosophy and craftsmanship

Mosgaard describes its production as 100 percent organic and based solely on Danish raw materials. Flavor is most important, and therefore longer fermentation, slow distillation and great precision in copper, reflux and cask selection are prioritized. The distillery’s premise is that Danish whisky should have its own identity, with sweetness, softness and fruit notes as guiding principles.

Whisky fair in Kolding launched Cask Draw Sample – 2026-03

A bottling was launched at the whisky fair in Kolding in March 2026, where visitors could draw directly from the cask. The whisky is described as matured in a 128-liter Oloroso sherry cask with a history back to 40-year-old Oloroso sherry.
