History

Thy Whisky is a Danish organic whisky distillery on the family farm Gyrup in Thy. We exclusively use our own grain to make our whisky, malted, mashed and distilled on the farm. The entire production takes place here on the farm—from the field cultivated to the bottle tapped. Thy Whisky describes itself as SINGLE ESTATE and focuses on organic terroir through the use of both modern and old Danish grain varieties as well as the beech-smoked malt. Our history highlights a unique Danish approach to single malt and an early marking of our own cask work, which has led to recognition as one of Europe’s most noted organic whiskies. A particular highlight is the 4-year beech-smoked single malt “Bøg,” which was named Best European Whisky in Jim Murray’s Whisky Bible 2020.

Production / Manufacturing

Thy Whisky produces exclusively organic grain from our own fields, and the entire production takes place on the farm – from field to bottle. Organic terroir is central: modern and old Danish grain varieties are used for our single malt, and the malt is smoked with beech smoke. We distill only once and have built our own modern drum malting plant. These choices support our philosophy of making classic single malt, but in our own way through a fully integrated chain – from field to cask to bottle. We also describe our offering as a combination of local terroir, natural ingredients and craftsmanship, giving our whisky a clear identity.

Limited Editions & Single Casks

In our Limited Editions & Single Casks, we explore Danish single estate whisky through smaller bottlings, single casks and vintage whiskies. Many of our experiments are maturing now in our cask store and expected to become future vintages. Private Cask (Cask Shares)

We offer private casks and a cask share program, where you can adopt or receive your own cask. Purchasing a private cask gives you the opportunity to choose the cask type, the malt and the grain, as well as follow the aging and determine bottling location and alcohol strength. Prices include the cask, contents and storage for up to 5 years, as well as full insurance and VAT in Denmark upon first payment. Examples of available cask shares include: - Cask share – Oat Whisky 4,600 DKK - Cask share – Moscatel Sherry 4,600 DKK - More cask shares and maturation subjects with varying sizes and cask types (e.g., 40–120 L, with various cask types such as Oloroso, PX, Bourbon, New American Oak, m.m.)

About the Colors: The Seven Colors of Thy

We have introduced seven colors as a visual way to convey different flavor profiles and stylistic directions within Thy Whisky. The colors help connect customers to the expected tasting experiences – for example, colors are described in relation to aging, smoking and cask influence, aiding purchase guidance without needing to know the bottle’s name in advance.

Visit / Experiences

We offer tours and tastings – both as regular distillery visits and as online/hybrid tastings. At the distillery, events and tastings are held, and there are also online forms such as Smagesæt for Online Christmas Tasting 2025 (7x3 cl). Additionally we sell gift cards for tours and tastings, and there is the possibility to buy tasting glasses and accessories in our shop. Through our website, a range of online and physical experiences are offered, giving guests the opportunity to experience Thy Whisky and be part of the whole process – from field to bottle.
