Company history

  • January 2020: Søhøjlandets Distillery founded by a six-person team in the central Jutland Søhøjland region with the aim of producing high-quality Danish spirits.
  • March 2020: The facilities in Sejs-Svejbæk are selected; renovation and conversion begin in an old workshop.
  • June 2020: The first pot still arrives and is put into operation.
  • October–November 2020: The first distillation is completed; the first bottle of New Nordic Dry Gin is launched in November.
  • 2021: Several gins are launched (Nordic Blueberry Gin, Barrel Aged Gin, Summerly Gin). November: European Trophy silver for New Nordic Dry Gin.
  • January 2022 and March 2022: Nuts & Barrels Gin launched; IWSC awards granted (New Nordic Dry Gin silver, Nordic Blueberry Gin bronze, Nuts & Barrels Gin bronze).
  • June 2022: Nordic Elderflower Gin introduced.
  • December 2022: First whisky aged in casks produced.
  • March 2023: Named Denmark Gin Distillery of the Year at the Berlin International Spirit Competition.
  • November 2023: Nordic Dill Akvavit launched.
  • Additional offerings: Private label gin services with the option for your own label and design.

  • Whisky: Crafted Danish Malt Composition Whisky - the first Danish malt whisky composed of single malts from Jutland, Funen and Zealand; aged in carefully selected bourbon casks; rounded and soft profile with fruity notes, floral nuances and natural sweetness.
  • Whisky-ready release: 1st batch (limited quantity), 350 ml, 45% ABV; wax seal and label, released around December.
  • Private label gin: Ability to produce your own quality gin with your own label design; minimum 10 bottles; prices from DKK 110 per bottle ex VAT; full flexibility in bottle type, cap, label design and paper choice.
  • Recommended enjoyment: Some products are enjoyed neat or in cocktails; aging production and cask aging highlight characteristics.

Whisky products

  • Crafted Danish Malt Composition Whisky (NEW): The first Danish malt whisky composed of single malts from distilleries in Jutland, Funen and Zealand; aged in carefully selected bourbon casks; rounded and soft profile with fruity and floral notes, natural sweetness and an elegant finish; constitutes the first release in a cross-Denmark series of Danish malt whiskies.
  • Batch and size: 1st batch, 350 ml, 45% ABV, wax-sealed; limited quantity; launched as a tribute to Danish craftsmanship and collaboration across regions.

Tasting notes

  • Whisky: Fruity and floral nuances, natural sweetness, balanced finish; the grain character and climate influence the overall profile; notes of fruit and flowers combine with a rounded, elegant finish.
  • The distillery's other products focus on juniper, citrus, blueberries, and botanicals, providing complex, fresh, and sometimes refreshing flavor experiences in gin and Akvavit.
