Staunstrup Distillery ApS is located on Mors, where the gin's character begins in the farm's own fields. History
The story of Staunstrup Gin begins with a hunting trip, where the idea of “a gin man on Mors” was born. Niels is a trained farmer and comes from an agricultural tradition, and today he sows his own grain in plow-free Mors soil. That grain is used for the raw spirit for Staunstrup Gin. The first batch was a vodka, but the process has since been changed to use his own raw spirit. In 2020 a mash was made from wheat harvested in the field beside the farm, “field no. 03” (Gunnar Jensen's Field). After mashing, yeast is added, and five days later a “low wine” of around 40% is distilled; this process is repeated five times before there is enough to distill the raw spirit. Finally the fine raw spirit is distilled into gin together with the botanicals, and Niels describes this self-controlled chain as decisive.
Raw materials and production
The core is raw spirit made from the farm's own grain. Niels mashes wheat harvested in the field next to the farm and adds yeast, after which fermentation begins. Five days later a “low wine” of around 40% is distilled, and this is repeated five times before there is enough “low wine” to distill the raw spirit. His modern distillery can then distill a raw spirit averaging over 95%, and the alcohol percentage often lands around 96%. The next step is to distill the fine raw spirit into gin together with the botanicals, which contribute to the gin's expression.

The whisky is not matured.

Staunstrup Distillery works from the “grain-to-gin” idea, and the original Staunstrup Gin is sold locally at the distillery. The history also mentions that work is ongoing on more bottles and variants of gin and, in the long term, also vodka and a bitter.
