History
Hans creates Marskdestilleriet
Hans has created Marskdestilleriet and devotes all his time to the site after saying goodbye to his good job. The story is personal and revolves around the dream of finding flavor and making spirits entirely from scratch, with the marshlands and the Wadden Sea as the natural starting point.
Ingredients and production
Marskdestilleriet works from a simple and very clear idea: alcohol must be created from the ground up. The distillery describes itself as hardcore enthusiasts, and the uncompromising approach is reflected throughout the work. The spirit is made in its own copper still, and there is a focus on flavor first. The local connection is pronounced, as the marshlands, the Wadden Sea, and the local holy spring are included as part of the site’s identity. The range also shows that the distillery works with botanical and local ingredients in several of its spirits, but the whisky is produced as single malt and matured in small batches on 50-liter casks. It paints a picture of a small distillery where they work closely with the ingredients and keep production down in scale without letting the ambition slip.
Maturation and cask types
The whisky is matured in small batches on 50-liter casks, and the cask palette ranges widely from sherry oloroso and ex bourbon to virgin Danish oak, virgin American oak, ruby port, madeira, and red wine casks treated as STR. In addition, used wooden casks are used, which have benefited from the salty air on Rømø. This points to a production where the cask is not just a container, but an active tool for shaping the expression. In particular, the STR cask shows that the distillery also works experimentally with wood and toasting.
Whiskies
The whisky range under Marsk Whisky consists of single malt releases, where the classic cask types take up the most space in the current lineup. Sherry, bourbon, and various forms of oak form the backbone, while port wine, madeira, and STR add more distinctive expressions. It is a range that is not large, but where the variation comes from the choice of cask and from small batch maturation. Whisky style and flavor profile
Across the range, there are clear traces of dried and darker fruit from port wine and madeira, vanilla and woody-sweet notes from bourbon and virgin oak, as well as spice and a more pronounced cask character from sherry and STR. At the same time, the mention of used wooden casks and the salty air on Rømø gives a drier, maritime touch. It is a whisky line where the casks carry a great deal of the flavor and where the local maturation setting plays along.
Visit the distillery
Marskdestilleriet can be visited on Rømø at Havnebyvej 25. It is open Tuesday to Friday from 11-17 and Saturday to Sunday from 11-16, while Monday is closed. The site also has a café, and you can contact them by phone and email. The visit is therefore a real opportunity to stop by the distillery during opening hours.

Philosophy and craft
