About the distillery
Holsted Whisky is a new Danish distillery in Holsted in West Jutland, under development with the ambition to make an exclusive single malt whisky. The project is still early in its course, but the direction is clear: limited quantities, hands-on craftsmanship and a whisky the creators themselves will drink. The first bottles are expected no earlier than 2030.
History
Holsted Whisky took shape in 2023, when a passion for whisky and the desire to create something of their own became the idea of the distillery. In January 2025 the company purchased a used brewing system from Kolding Gårdbryggeri, which was to form the basis of production. On 1 October 2025 Holsted Whisky ApS was founded, formally launching the project. Since then, the work has been about dialogue with authorities, a test setup in 20' shipping containers, and plans to obtain the final permits and build a distillery ready for production. The first distillation is set as the next major milestone in 2027, and the first bottling is expected no earlier than 2030.
Raw materials and production
Holsted Whisky is working with a used brewing system that was purchased as the foundation for production. The system is being set up in 20' shipping containers, where processes can be tested and fine-tuned before the distillery is fully in place. No details have yet been published about raw materials, mashing, fermentation, still types or the distillation process itself, but it is clear that the setup is happening step by step with a focus on getting equipment and methods to work before the first whisky is made. The distillery describes its approach as a combination of traditional Danish craftsmanship and international whisky expertise, and it points to a project where process and precision are allowed to mature together with the facilities.
Maturation and cask types
There is not yet any documented information about casks, storage conditions or maturation experiments. The only concrete promise is that the first whisky can only be bottled after it has matured for at least three years, and that the first bottles will be ready no earlier than 2030. Until production begins, cask maturation remains a planned part of the journey rather than a described chapter.
Whiskies
The lineup has not yet been released, and there are no whiskies on the market from Holsted Whisky. Therefore the portfolio currently consists of a promise of a Danish single malt in small quantities, created with a focus on craftsmanship and authenticity. The distillery emphasizes that different harvest years and casks should be able to give their own expression, rather than everything being forced into a single fixed signature. It is a project where the first bottles will define the identity when they eventually arrive.
