Weutz.at is an Austrian whisky producer based in Graz. Production

Raw materials

The raw material can be barley (for single malt), but wheat, corn and spelt are also mentioned as ingredients in Styrian whisky production.

Malting

Before the malted grain is mashed, malting occurs where enzymes are activated to later express the grain's strength.

Mash

With the addition of warm water, starch is converted into sugar, producing a sweet barley mash – whisky wort – which serves as the basis for further processing.

Fermentation

A pure yeast culture and temperature-controlled fermentation ensure that the mash ferments to completion within about 14 days.

Distillation

The distillation apparatus follows modern technical standards with both a rau (smoked) and a final distillation. The middle run (Mittellauf) ends in the cellar.

Aging

The maturation takes place in the barrel cellar, where the casks vary in size and wood type (French Allier and Limousin oak). The casks receive different toast levels and are produced by an Austrian barrel maker according to their own specifications. For Sherry-Wood finishing, the Sherry is produced in-house – which influences the product's character.

Whisky from Styria

Since presenting itself as a project around a whisky selection from Styria with a focus on single malt as a central idea – where barley forms the starting point.
