SEE-DESTILLERIE® sits by Wolfgangsee in the Salzkammergut and is operated through Klosterkellerei Oberösterreich/Salzburg. Production

The production follows a clearly Scottish-inspired process: - The malt is milled in the house mill and ground to mash. - The mash is lautered to remove husks and unwanted substances. - Fermentation in fermentation tanks, after which the alcohol reaches around 8%. - First distillation in a wash still (heated to about 78.3 °C) to raw spirit (about 20–24% alcohol). - Second distillation in a spirit still, where heads and tails are separated, and the heart is used for aging (typically around 60–69% alcohol). - The aging takes place for 3 years in ex-Bourbon barrels from Kentucky and ex-Sherry casks from Spain, where the Klosterkellerei environment in St. Wolfgang provides a balanced climate. - After aging, blending and bottling are done by hand and brought to drinking strength with water from the Wolfgangsee sources.
