Maturity and Origin
Maturity process – it all began in 1987. Time, patience, serenity, and maturation were ingredients that helped Pfau Distillery, under Valentin Latschen, develop from a small basement distillery in the family inn Pfau in the Jauntal Valley, Carinthia, Austria to a top distillery known across Europe. The distillery's motto has always been: guarantee of quality – from fruit to the final brandy. Pure brandy comes only from pure, ripe fruit. With timber sponsorship, Valentin Latschen contributed to a new awareness of regional apple varieties and pear varieties, from which the then 30-year-old entrepreneur distilled his first noble brandies.
Vision and Mission
Bring nature into the glass – the aim is not only to distill good, but the best schnapps and to convince as many as possible of this idea and inspire them with the inherent philosophy. So Latschen embarked on a mission of sorts, where he succeeded in astonishing many distillation enthusiasts with his uncompromising commitment to quality. Pfau and Valentin Latschen – a brandy with personality. Local and international catering companies and the world of gastronomy show recognition. The 2006 apricot brandy earned praise for its beautiful fruit and radiant potential. Rowanberry, raspberry, Williams pear and sour cherry were awarded five stars, as were Apple, Plum and Fruit Brandies.

Quality and Philosophy
Bring nature into the glass – nature in the glass. Pfau Distillery is a partner of Quinta Essentia, an independent Austrian association of distillers. No sugar added, no artificial aroma additives. The distilled products are labeled with an age description and the alcohol comes exclusively from fruit sugars. Natural variations reflect vintages and conditions.
