History
Dambachler is a distillery in Gutau in eastern Austria, located among lush orchard meadows and mysterious granite formations. On a farm that is hundreds of years old, they practice the craft of distilling and produce Edelbrände and liqueurs as well as a GRANIT pur Linie. The company is small and does not produce mass-market goods; the distillation process is slow and gentle, and the longer and gentler it is, the more complete the result. The master distiller is Florian Prßckl, and Birgit Stutz-Prßckl handles distribution and the Bio Balsam production. Dambachler works with regional raw materials and focuses on circular economy throughout the value chain.
Production
In the distillery, several tons of quality raw materialsâfruit, vegetables and grainsâare processed annually into various Edelbrände, liqueurs and other spirits. A central part of the philosophy is that the slow distillation process yields the perfect result. For Bio Balsam, selected MĂźhlviertel fruits (Zwetschken and quinces) are gently processed and undergo years of aging in wooden casks.
Products / Whisky Series
MĂźhlviertler Cube Bio Whisky is described as an intense and complex whisky with smoky and grain notes. On the palate it is smooth and soft with a pleasant finish.
In addition to the whisky there is a range of other products in the portfolio such as Edelbrände, liqueurs, and Bio Balsam. The Balsam range is based on organic fruits from Mßhlviertel and matures in wooden casks over several years (Quince Balsam, Zwetschke Balsam and Weichsel Balsam).
Bio Balsam â tasting notes and accolades
Bio Balsam is made from selected organic fruits from MĂźhlviertel and aged in wooden barrels for several years to develop deep aromas. Quince Balsam provides a noble fruity note, Zwetschke Balsam provides earthy, grainy and fruity nuances, and Weichsel Balsam requires around four years of barrel aging, yielding rounded fruit notes and a slightly tart, mild finish. The Balsams are available from selected distributors and in Dambachler's Genuss-Shop in Gutau, and the products can also be delivered on request.
Visits and Experiences
The Genuss-Shop in Gutau is open on Fridays from 13:00 to 17:00 (holidays excluded) or by appointment by phone. The webshop is available 24/7. Contact details for the shop and product range can be found through Dambachler's contact persons.
Philosophy
Dambachler's philosophy is built on the desire for regional quality and genuine craftsmanship. Emphasis is placed on the joy of the work and on local ingredients produced within the regional MĂźhlviertel cycle. They emphasize that what is produced in MĂźhlviertel represents the highest standard for Edelbrände, and that they do not create mass-produced goods but go slowly and calmly about itâbecause a slow and gentle distillation process leads to a more complete result.
