History
The Wellington distillery is located at 130 Fairy Glen Road, Collinsvale 7012, in the valley at the foot of Kunanyi/Mt Wellington in Tasmania. Owners and distillers are Dale and Claire William, who are proud to create excellent whisky that captures the essence of their pristine surroundings. One of the distillery's key secrets is the pure water source used in mashing and distillation – the water comes from Wellington Park and has traversed streams and gorges, filtered through rocks formed aeons ago, before it flows directly to the distillery by gravity. The purest water from Kunanyi/Mt Wellington gives the whiskies a character that sets them apart. According to the content, the ownership of the distillery changes in August 2024, with Dale staying on for a further 12 months to ensure that the same quality spirit is released from this underrated, hidden gem.
