Historie
Derwent Distillery is located on the Derwent River in Dromedary, Tasmania. Owned and run by Emma and Robbie Gilligan, a couple with extensive experience in the Tasmanian spirits industry. Together they produce award-winning small-batch Derwent Distillery Single Malt Whisky and Last Sanctuary Gin. Always guided by nature.
Produktion / Fremstilling
The distillery produces spirits based on Tasmania's ingredients, some botanicals foraged on site, and uses copper-pot stills in gin production. Whisky is expressed in a Scottish style and produced in small batches, with variants from traditional to experimental. Head Distiller Robbie is responsible for the distillation. Private cask experiences are also offered.

The following whiskies are mentioned in the shop/collections: Botrytis Cask - Single Malt Whisky (500 ml, 46% alc/vol) with notes of honeydew melon, white peach, and a long, velour finish; Christmas Cask Single Malt Whisky - Limited Release (500 ml, 46% alc/vol) matured in a Tawny Port cask and finished in Madeira and Oloroso casks; Tawny Cask - Single Malt Whisky; Meyrieux Virgin Oak Cask - Single Malt Whisky (Tasmanian Whisky Week Special Release); 2025 Cailleach Winter Release - Single Malt Whisky. In addition they sell Last Sanctuary Gin and other botanical products such as Last Sanctuary Rhubarb Pink Gin and Last Sanctuary Native Gin, all with a focus on local ingredients and sustainability. The products are presented in 100% recycled glass and environmentally friendly practices.

The distillery is located on the Derwent River in Dromedary and has a cellar door.
