History
The Canberra Distillery is a small-batch distillery run by Tim Reardon, who has a background in high-level economic analysis, but whose heart belongs to distilling. According to their story, they are a small operation focused on local flavor experiences and the creative process. They describe themselves as handmade spirits with a sense of place and purpose, continually emphasizing experimentation and the development of new combinations. A central part of their philosophy is that they only use the heart of each distillation for their range, which highlights balance and purity in their products. In addition to gin and other spirits, they also produce whisky and have existing products as well as experiences around their distillery.
Whisky production
- Malted barley from Riverina
- Pot-distillation
- Aged primarily in Pedro Ximénez sherry casks
- Some casks from local wineries, which adds complexity and nuance to blending
Other production
- The range includes gin, vodka and liqueurs, and their approach emphasizes craftsmanship and flavor development in small batches.
