Historie

Taylor & Smith Distilling Co. is an independent craft distillery in Hobart, owned and run by Natalie and Ben. They experiment with Tasmania's botanical herbs and carefully craft their base spirit to reflect the landscape and tell the stories of the place. The water that feeds the distillery comes from a snowmelt lake at Mount Field National Park. When they started, they left small jam jars of gin on neighbors' doors, and the neighbors returned with citrus fruits and other botanical ingredients they hoped would feed the ongoing development. Their approach is defined by craftsmanship and human connection through spirits; they have no automated systems, and it comes from the heart. Natalie Smith and Ben Taylor are behind it.

It is part of Hobart's identity and focuses on bringing people together through their spirits and the small things that are beautiful in the right context.

Produktion / Fremstilling

The process is slow, careful, nuanced, and local. At the distillery they malt Tasmanian malted barley by hand; mash; ferment with their unique yeast profile and distill with direct flame. They use only casks of the highest quality to match their meticulously crafted spirits; they nose, taste, and refine as it matures to ensure the best flavor. Subtle caramelization provides warmth and depth, and the whiskey takes on the character of a given cask and thus the spirit of Tasmania, the seasons, and the sun. Our whiskies are only lightly filtered to preserve flavor, and we choose not to chill-filter our whiskey, as it is believed to alter the final taste. As a result, some bottles may contain a small sediment at the bottom if left undisturbed for longer periods—that is perfectly normal for lightly filtered whiskey.
