History

Hillwood whisky is a hidden gem from Tamar Valley Distillery, located in Hillwood, Tasmania by the Tamar River, where Master Distiller Paul Herron and his triplet sons run the process and produce whisky with a full-bodied and hearty flavor.

Production

Hillwood produces a modern Australian whisky in the tradition of Scottish single malt, but with a distinctive touch from wild Tasmania and their family-operated approach. The area is described as a private, secluded oasis where you can hear the wind rustling through the trees and forget the rest of the world. The district's limited-edition release bottles consist of small formats, single casks, and are typically produced in around 30–40 bottles per cask. From grain to glass, their products are 100% handmade; Hillwood is one of the few distilleries that create everything from grist to bottles – they malt, mash, ferment, distill, mature and bottle all of their whisky on the Hillwood estate.
