Kitty Hawk Distillery was founded in Brisbane by two couples who met through a shared love of aviation. The name refers to the site of the first powered flight in 1903 in Kitty Hawk, North Carolina. As aviators, our own small steps into an exciting and growing craft spirits industry have been both challenging and experimental, but to see, taste and smell our own unique spirits, distilled on our copper pot stills, has been an experience like the feeling of flying. Our belief is that life is too short not to take chances. Step out of your comfort zone. Explore new worlds and follow your dreams. Produktion / Fremstilling

Kitty Hawk Distillery describes a craft and a spirits aesthetic, where our spirits are produced with copper pot stills. For our whisky range, Stratus Single Malt Whisky is distilled in our copper pot stills and aged in an Oloroso sherry cask, after which it is blended with whisky from ex-Bourbon American oak casks and bottled at 47% ABV. The American Flyer is a single malt, matured in ex-Bourbon American oak and finished in a Rye cask. The 120 is a Single Malt Australian Whisky at 46% ABV, aged in American oak casks (ex-bourbon) and finished in an Apera cask, with only 60 bottles in the original range. Byron Double is a single malt, aged in ex-Bourbon and finished in a Lord Byron Rum cask from the Lord Byron Rum Distillery in Byron Bay; very limited release (120 bottles).
