Hunnington Distillery is a Tasmanian craft distillery in Deadman’s Point, with a small whisky series centered on Hunnington Triple Distilled Single Malt Whisky. Here it isn’t breadth, but cask identity that carries the story: sherry, Apera, and bourbon leave clear traces, and each release is made as a distinct bottling. History

The distillery’s early public profile is closely tied to the named stills Lil’ Nell and Big Nell, which are already mentioned in November 2017. At the same time, the house is described as one of Tasmania’s newer craft distilleries and as the producer of Deadman’s Point spirits as well as Hunnington Single malt, triple distilled whisky. The story you can follow through the whisky is an evolution in small, concrete steps: HD015 rests in a Spanish sherry cask, HD009 in an Australian Apera cask, and HD060 takes a more complex route with five small ex-sherry casks followed by a bourbon finish. It’s a story of a distillery that builds its identity around craft, named stills, and individual casks rather than large volume and broad distribution.

Ingredients and production

The whisky is made from malted barley and distilled three times. The distillery itself links mashing directly to the malted barley and describes the process as extracting the good from malted barley, so the starting point is a classic malt whisky foundation. The craftsmanship is underscored by the named stills Lil’ Nell and Big Nell, but the decisive distinguishing feature is the small scale: the whisky is released as a single-cask bottling or in very small batch releases, and production is therefore closely tied to the individual cask. This also shows in the documented bottle sizes, where both 200 ml and 500 ml are used to split each release. This approach allows for clear differences from cask to cask, rather than a uniform standard profile.

Maturation and cask types

The maturation is clearly cask-driven. HD015 rests in a Spanish 100-litre sherry cask, and the small cask size is highlighted as helping to provide a deep and concentrated contact with the wood. HD009 matures in an Australian 100-litre Apera cask, while HD060 takes a more layered path: first five 20-litre ex-sherry casks that previously held Mackey Triple Distilled Whisky, and then two years of finishing in a 100-litre bourbon cask. This gives the distillery a maturation style where both cask type, previous contents, and size are actively used to shape the whisky.

Whiskies

The documented whisky portfolio consists of three releases in Hunnington’s Triple Distilled Single Malt series: HD015, HD009, and HD060. They are all standalone cask releases or very small batches and are sold in 200 ml or 500 ml bottles. HD015 stands as the most direct sherry interpretation, HD009 as the Apera-influenced bottling with a more complex nose and malty fullness, and HD060 as the most composite release with both ex-sherry and bourbon in the process. Together, they show a small but clearly defined series, where the differences between casks are the whole point.

Whisky style and tasting profile

The style throughout is sweet, malty, and cask-driven. HD015 delivers floral notes, Turkish delight, and rich fruit notes over a distinct sherry profile. HD009 heads towards soft forest floor, beautiful spices, floral notes, and malty rich milk chocolate, while HD060 adds chewy toffee, gentle oak character, floral and fruit, as well as shortbread. Hunnington works based on a few clear choices: craft craftsmanship, triple distillation, and small-batch, single cask maturation.
