Fossey’s Distillery is a family-owned boutique distillery in Mildura. The journey began in Mildura in 2017 and was originally started as a lifestyle project, but quickly evolved into something bigger. Fossey’s focuses on using local ingredients and high quality in both gin and whisky and describes itself as a distillery where craftsmanship and history meet the Australian gin and whisky culture. The distillery invites guests to experience the distillation process and enjoy enticing drinks in their Ginporium.

Production / Manufacturing

Fossey’s works with exceptional local ingredients and Australian botanicals and places importance on craftsmanship at every step. The unique still named Stanley handles the distillation process and emphasizes that all bottles are hand-bottled and hand-labeled on site. The products are bottled and labeled onsite, and guests can follow the process from start to finish. Fossey’s has a culture based on Australian botanicals and locally produced products to showcase Mildura’s and Australia’s best offerings.

The Whisky Series

Fossey’s produces Single Malt Whisky and Peated Single Malt Whisky under names such as Single Malt Single Barrel Whisky and Peated Single Malt Single Barrel Whisky. Their range also includes other products such as Butterscotch Whisky Liqueur, but it is referred to as a liqueur and not a whisky in the traditional sense.

Visits and Experiences

Visiting includes tastings and a Gin & Whisky Bar, where you can enjoy tasting packages of both gin and whisky. The distillery is open Thursday to Sunday from 2:00 PM, and visitors can watch the distillation process — including real-time distillation demonstrations. There is also the option for free delivery to Mildura and surrounding areas, as well as online shopping with delivery Australia-wide.

Events and Philosophy

Fossey’s emphasizes the family and their Fossey philosophies and describes their approach as Fossey-Philosophies with the motto 'bite off more than you can chew, then chew like crazy'. They have hosted events such as Twilight Christmas Market on Risbey Lane, Mildura next to their venue, and have opened another venue in Melbourne on Lygon Street.
