Historie

Mathew and Julie Cooper founded Fannys Bay Distillery in 2014 as a small family-owned distillery in Tasmania's northern coastal region. Production began in 2014 and the first cask was laid down in November of the same year. The distillery is described as small-scale and family-operated. According to their story, it is not a large factory, but one man running a copper still by hand. Julie writes the labels by hand and is responsible for the distinctive French, square bottle. The whisky ages in hand-selected casks and combines Scottish tradition with a Tasmanian touch. Fannys Bay is an independent and family-owned producer.

Produktion / Fremstilling

Fannys Bay produces small-batch single malt whisky and matures them onsite in oak barrels near Bass Strait, which gives salty undertones from the coastal climate. The whisky is slowly distilled with traditional copper stills and made from locally malted barley and pure Tasmanian rainwater. The coastal climate affects aging throughout the process in casks from ex-bourbon to French oak. Their portfolio includes casks such as Bourbon, Port, Sherry, Chardonnay, Shiraz and Pinot as well as Peated casks, providing different flavor profiles.

  • Single Malt Whisky in small batches – aged in casks near Bass Strait and the coast. The whisky is described as rich and influenced by sea air. Different casks provide variants, including ex-bourbon and French oak, and the alcohol strength typically ranges between 40% and 66% in different batches.
  • Casks and flavor profiles – casks are chosen among Bourbon, Sherry, Port, Chardonnay, Shiraz and Pinot as well as Peated details. Flavor notes range from caramel and vanilla to hints of new oak and spices. Undertones of salt from sea spray can change with the seasons.
  • Gift packs and accessories – Fannys Bay offers Christmas Gift Packs such as The Cozy Classic, The Twin Toast, The Festive Pour, The Collector’s Cheer, The Little Yuletide Treat, The Cozy Companion, The Jolly Giant and The Morning Cheer, which include small 100 ml bottles or 500 ml bottles together with glasses and accessories.

Besøg / Oplevelser

Visits to Fannys Bay are by appointment, and the cellar door as well as tastings and storytelling are available to guests.
