History

The Callington Mill Windmill is our brand, and Callington Mill Heritage precinct is home. We have carefully restored the entire village and transformed the site into an interactive tourist experience using video and sound to bring the complex to life.

Production and Approach

Tasmanian cool-climate whiskey is a central part of our identity, and the distillery is presented as a modern, fully automated and integrated turnkey distillery – our founder describes it as 'the Rolls-Royce of whisky distilleries'. The range involves a wide array of maturation approaches and cask types: Sherry- and Port-finish, Oloroso and Pedro Ximénez, Madeiras and other exposures via systems like Solera, which blend vintages of different ages for a complexity that develops over time. Experimental maturation methods are also performed, such as Amphora maturation in clay amphorae, where whisky after an initial aging in oak is moved to the clay amphorae and given time to rest. The producer also highlights a range of expressions as part of their line and describes the process as clearly linked to Tasmania's environment and raw materials.

Products and Whisky Series

  • Festive Cask Single Malt Whisky (46% ABV, 700 ml) – a combination of festive notes such as Christmas pudding and candied orange zest, with a gift that includes a handmade Traditional English Christmas Pudding macerated in Callington Mill whisky.
  • Pedro Ximenez Tasmanian Single Malt Whisky – after maturation in first-fill Ex-Pedro Ximénez casks; dark mahogany hue and notes of raisins, dates and figs, with recognitions and awards.
  • Enigma Tasmanian Single Malt Whisky – expresses complexity and elegance, aged in Ex Sherry Oak Casks from Jerez and Ex Port Oak Casks from the Douro valley.
  • Quagmire Peated Tasmanian Single Malt Whisky – a peated expression and part of our portfolio with pronounced smoky notes.
  • Solera Tasmanian Single Malt Whisky – based on Solera-maturation with 14 different casks and fractional blending for continuous development.
  • Oloroso Tasmanian Single Malt Whisky – matured exclusively in Oloroso casks for a full-bodied, dry and nutty character.
  • Amphora Tasmanian Single Malt Whisky – unique maturity in three clay amphorae after prior oak maturation; a bold approach for a whole new flavor experience.
  • Aurora Tasmanian Single Malt Whisky – started in Cream Casks, then at least one year in Brandy Casks; total maturation about 4.5 years and inspiration from the aurora borealis.
  • Madeira Nouveau Beginnings Tasmanian Single Malt Whisky – Madeira cask maturation, limited edition for Whisky Abbey; deep mahogany color and full body.
  • Old Gaol Tasmanian Single Malt Whisky – Heritage Series, 65.6% ABV (cask strength); matured in Oloroso and French oak for an intense and characterful experience, inspired by the Oatlands Gaol history.
  • El Sol Tasmanian Single Malt Whisky – cask-finished in ex-sherry casks from Jerez, with notes of dried fruits and body.
  • Madeira cask variants and other limited releases such as Old Gaol and Pedro Ximénez cask finishes are all clearly listed as part of the range.

There are also special gift packs and special collections such as the Tasmanian Single Malt Whisky Gift Pack, which bundles Quagmire, El Sol and Solera in one package. Also highlighted are Amphora and Aurora as unique expressions in the range.

Visits and Experiences

  • Visit our Hobart restaurant and Cellar Door at MACq01 (18 Hunter St, Hobart, Tasmania) with opening hours and kitchen times listed on the site.
  • Visit our Oatlands distillery and cellar door (6 Mill Lane, Oatlands) with daily opening hours 10:00–17:00.
  • Whisky Tasting & self-guided tour: for example, 50 AUD you can get four 15 ml tastings plus a self-guided tour of the process.
  • Serendipity Experience: $295 per person – create your own Single Malt Whisky at cask strength, including a 700 ml bottle of your unique whisky, a signed label and a self-guided tour of the distillery.
  • Guided tours: 150 AUD (daily at 12:00) with backstage access and the opportunity to taste four 15 ml selected whiskies, plus insight into the 'Wort, Wash, Spirit and Cask' processes.
  • Heritage tours: Free self-guided tour in the Heritage area.

Philosophy and History

  • The history centers on Callington Mill as a brand and on the Watchtower home in Oatlands, with a story of a former illegal distillery and a new start in 2021 with a state-of-the-art whisky distillery in Tasmania.
  • The Solera philosophy and the use of various well-known cask types (sherry, port, Madeira, cognac, bourbon, etc.) provide a deep and layered flavor profile and show an approach historically building on the classic Spanish and port wine traditions.
