History
7K Distillery is dedicated to flavor and distinctive flavours. The company was represented by Tyler Clark, who built his own still from the ground up – “our still was hand built right here from sheet metal” – and the spirit behind 7K is described as independent, experimental spirits development. They describe themselves as part of a story of small batches, craftsmanship and fired-up curiosity. Part of the mission is to celebrate Tasmania’s distinctive flavors and techniques and to support locally produced ingredients. They want to show that Tasmania is at the center of their ingredients and for the unique flavor profile, and they highlight sustainability and local engagement as core values. There is an emphasis on sourcing as many ingredients as possible in Tasmania and on creating products with consideration for the environment and the local community.
Production/Manufacturing
General approach
7K Distillery describes itself as small-batch, with a focus on sustainability and local production. They note that everything is made in Tasmania and that their approach—a blend of practice and tinkering—drives development. Their philosophy includes delicate, handmade products and a love for Tasmania’s unique flavors.
Ingredients and flavour profiles
They focus on using as many local ingredients as possible and mention Willamette raspberries sourced directly from Westerway Raspberry Farm as a key ingredient in Tasmanian Raspberry Gin. Raspberry Gin is produced without syrups or artificial additions and is described as naturally sweet and fresh.
Whisky and cask finishes
7K Distillery produces a Tasmanian Single Malt Whisky series with various finish variants, including Armagnac Barrique, Cognac Barrique and Rye Barrel, as well as Guinness Barrel; all described as Single Malt Tasmanian Whisky. Some of the products have details such as alcohol strength and age statements on the product pages (e.g., Armagnac Barrique, Cognac Barrique and Rye Barrel are aged around 4 years and 10 months). Local finish methods and unique cask combinations are central to their whisky range.
