Hvem er 5Nines?
Two men, David Pearse and Steven Griguol, with one shared passion – to create the perfect spirit. 5Nines – 99.999% perfection. We are a small batch distillery located in the picturesque Adelaide Hills, specializing in handmade single malt whisky, gin and other premium spirits. One of our special offerings is the 5Nines Whisky Barrel Experience, where you can purchase a selected cask and fill it with our handmade malt spirit. It matures in our bond store for several years and gives you a great reason to visit us. We have designed and built our own copper pot still and have also repurposed a stainless-steel vat into a mash tun – which gives us full control over the brewing process. The distillery was founded in 2016 and since then we have carefully laid whisky to mature in selected premium casks. Our single malt whisky is primarily made with locally malted barley. Some portions are even smoked with South Australian peat to add more depth to the flavor. Later we have also developed a range of other spirits including distinct gins.
Production and process
We use the finest malted South Australian barley, which is passed through our small batch grain mill to ensure the full malt flavor is extracted from the grain. The malted grain is mashed by hand to ensure proper temperature distribution and sugar conversion. Our copper pot still provides a unique, handmade flavour. When the still is opened at the end of a distillation run, the steam is clearly visible on a cold day. Condenser temperature control is important to obtain clean spirit. We have a 20-liter cask rack system primarily for private investors, so each cask can be easily inspected and monitored during maturation. New make spirit (63.4% ABV) is tapped and continuously monitored through tasting and aroma analysis to determine “cuts” and ensure full flavor without faults. We clearly demonstrate craftsmanship through our processes, from nosing the new spirit to monitoring the run-off and on to bottling and labeling of the whisky. All whisky casks are continually inspected to understand what character each unique cask imparts on the whisky.

5Nines focuses primarily on craft single malt whisky as well as gin and other premium spirits. Our whisky is based on locally malted barley, and we work with small batches and our unique equipment to achieve a distinctive flavor profile.
Private Cask Offer
We offer private investors the opportunity to purchase a 20-liter cask and have our new malt spirit filled into the cask. The cask is placed in our secure bond store for about 2 years. When the maturation is complete, the whisky is bottled and labeled specifically for the owner. You choose bottle labeling and strength from barrel strength down to 47% ABV. As a guide, about 25-30 bottles of 700 ml per cask are expected at maturation.

This includes: A 20L cask as described, about 20 litres of new spirit (63.4%), storage in the bond store for about 2 years, insurance, expert advice, bottling and labeling of the whisky during maturation, the opportunity to visit the cask, certificate with serial number and insurance, all duties and GST paid, and the possibility to refill or have the bottles shipped home. Shipping costs are settled separately at maturation, or pickup is possible.

5Nines Whisky Barrel Experience and experiences
We also offer Whisky Barrel Experience, which provides a special opportunity to buy a private cask and have it filled with our malt spirit, aged in the bond store in the years to come. This provides a unique opportunity to visit the distillery and follow the maturation process.
Visiting and experiences
We can arrange personal visits and experiences, including the possibility to visit and taste your own cask during maturation by appointment. In addition, we offer the option to participate in a brewing or distillation day for an additional fee.

We operate on a small scale to carefully monitor quality control in all aspects of brewing, distillation and spirit maturation. We value local collaboration and the influence of nature on our products and involve locally produced ingredients wherever possible to support our local community. We have designed our distillery and equipment with a focus on craftsmanship and a unique flavor profile.
