History

Maison Victors is an organic (bio) distillery south of Toulouse, founded in 2017, and bases its production on strong values such as quality, authenticity and transparency. Production takes place on-site with equipment and alambics designed by the distillery itself. They emphasize local ingredients, traceability and respect for terroir and the environment. The distillery also highlights their commitment to reducing waste and valuing by-products throughout the value chain, as well as the use of local energy sources and filtered processes to limit environmental impact.

Production / Manufacturing

Ecology and local practices

All production is 100% organic, with a focus on selecting grains and botanical ingredients, strict traceability and local production. They farm locally, work with energy efficiency and the extraction of by-products for the benefit of the local community and the environment.

Process and equipment

They design and produce all spirits at their distillery with their own alambics and equipment. Whisky is produced by mashing and fermenting on-site from organic barley malted in France, distilled in copper pot-still alambics and aged in selected oak casks. The throughline of the production is an environmentally friendly approach: rainwater, energy and heat recovery, and a plan to reduce waste throughout the process.

Products and ranges

  • Whisky (Single Malt) from Maison Victors, including editions such as Origines ex fût Bourbon, Origines - Sherry Cask and Origines - Single Cask - ex fût Muscat, all produced as Single Malt and not chill-filtered.
  • Gins and rum produced on site, including special variants such as Knox - Knifemaker (Gin), Five O'Clock (Gin) and Titans (peaty gin refined in amphora), as well as Rum Metropolitain (Pure Single Rum).
  • Pastis, Vermouth and other spirits, all developed with a focus on natural ingredients and no colorants or additives.

Quality and tasting notes (in general)

The whiskies are described as linked to fruity, sweet or spicy notes with a clear touch of malt and caramel and a natural colour due to being unfiltered. Emphasis is placed on terroir, botanical infusions and slow maturation in casks.

Environment and sustainability

The distillery highlights the use of rainwater, energy-efficient solutions and by-product reuse, as well as plans to produce bottles in the region and to use reduced packaging and wooden screw caps without glue. There are efforts to achieve circular processes and to reduce CO2 impact through innovations in heating and cooling.

Whisky Products / Series

Origines - ex fût Bourbon

A single malt expression, aged in first-fill bourbon casks. The whisky is brewed, fermented and distilled twice in the distillery's pot-still alambics, not chill-filtered and retains its natural colour. It has won a medal at the Concours National de Paris 2025.

Origines - Sherry Cask

Single Malt aged in first-fill sherry casks (Oloroso/Pedro Ximénez concept). Rich in malted notes, glaze-like and a deep, rounded profile.

Origines - Single Cask - ex fût Muscat

Third single cask edition, distilled in July 2020 and bottled in September 2025. Notes of honey, baked pastries and fruit, with a sweet and harmonious finish.

All Whisky variants are single malt, produced and aged at the distillery and described with complex notes of fruit, honey, caramel and spices, with different cask types that shape the individual expressions.

Visits / Experiences

Distillery visits

The distillery offers guided visits of about 1 hour and 45 minutes, providing insight into the ageing of malt, unique alambics and a detailed tour of the production. You also visit the cellars and gain insight into bottling and maturation of whiskies and rums. The visit is for adults and includes a tasting of the distillates.

Events

Example: Visit Saturday 20 December at 14:30 (the event details include installation, techniques and tasting). Price 10€ per person and about 1 hour 30 minutes in total. Limitation and ticket requirements: max 10 people, ticket confirmation starts from at least 4 participants.

Philosophy

Maison Victors describes a set of values that drive the entire production: organic and local engagement, authenticity and quality without colorants or additives, and an ambitious plan to reduce environmental footprint through energy management, reuse of by-products and more sustainable packaging and production solutions. Emphasis is placed on a botanical garden (jardin botanique) to control the quality of raw materials, and they are working to reduce plastic and use recycled glass as well as wooden frames without glue.
