History

Distillerie Mabillot was established in 2018 in Bury, Hauts-de-France. The site functions as both a farm and a distillery, where barley from the family-owned farm is used to produce 100% French single malt whisky. The process of brewing, distilling, maturation, and bottling takes place on site, and the distillery has its own cellar where different casks are stored until they reach their best character.

Production/Manufacturing

The distillery uses an on-site distillation process and uses barley from the family-owned farm. Maturation and bottling also take place on site, and there is a dedicated cellar for storing different casks, which mature until they reach the desired flavour profile. The production is described as 100% French single malt whisky.

Philosophy

Distillerie Mabillot places emphasis on producing 100% French single malt by using barley from the family-owned farm and carrying out the entire process — brewing, maturation, and bottling — in-house. It highlights smoky and spicy notes as part of the flavour profile.
