History
Distillerie des Volcans d’Auvergne is a craft distillery rooted at the foot of the volcanoes in Auvergne. It operates in close harmony with nature and the landscape, which inspire their spirits and whiskies. Emphasis is placed on authentic craftsmanship and high-quality ingredients, and the distillery’s environment plays a central role in the development of their products.
Production / Manufacturing
The distillery uses two copper pot stills and steam heating, providing controlled heat during distillation. They practice a double distillation, and the heart of the distillation (coeur de chauffe) is kept for aging. The water comes from Auvergne and is naturally low in calcium, which influences the process and flavor. Aging takes place in a cellar area (chai) with space for more than 1,800 barrels. The casks range from old bourbon barrels to barrels that previously held rum (from Jamaica and Barbados), calvados, cognac XO, tequila, Banyuls, sherry, vermouth and more. Some whiskies are finished in new French oak barrels, for example in KORMA Origine. Before aging, the alcohol content is reduced to around 63%, and ongoing samples are taken to ensure consistent maturation. Finally, eau-de-vie is bottled directly at the distillery after aging.
Products / Whisky Series
- KORMA Origine (45% vol.): Double wood aged in bourbon barrels with a 12-month finish in new French oak. Red-brown to golden hue; notes of vanilla, caramel and honey; full-bodied and long finish.
- KORMA Finish Calvados (46% vol.): Finished in Calvados casks; notes of apple and pear, honey and caramel; long and warm finish.
- KORMA Finish Cognac (45% vol.): Finished in cognac casks; notes of dried fruits, honey and spices; warm and refined finish.
- KORMA Finish Sherry Palo Cortado (44% vol.): Sherry Palo Cortado finish gives dried fruits, nuts and caramel; long, delicate oxidized finish.
- KORMA Finish Stout (45% vol.): Finish in stout barrels; notes of dark chocolate, coffee and malt; full-bodied and spicy finish.
- Borvo (40% vol.): Premium blended whisky based on malt and grain; fresh fruity aroma and a round cake-like mouthfeel with a light spicy aftertaste.
Visits / Experiences
The distillery participates in various events and markets. In December 2024, you could find their whiskies at Comptoir des Vignes from December 13, where Korma and Borvo were showcased. In January 2025 they participated in FRANCE QUINTESSENCE, an exhibition and spirits event. There is also mention of medals at the Lyon International Competition in 2025. Visits and tastings are available through their events and outlets.
Philosophy
The Auvergne region forms the foundation of the distillery's identity. Nature, the volcanoes, the rivers and the countryside give the whiskies character and refinement. The company emphasizes traditional French craftsmanship, the selection of quality raw materials, and a process that combines old-fashioned distillation methods with modern control to achieve balanced whiskies. Water, malt from the region and Douglas-fir wood in the cellars contribute to unique aromas and structure.
