History
Distillery d'Hautefeuille is located in Picardy and was established in 2017 by Etienne and Marie-Astrid d'Hautefeuille on the family farm. The property, Ferme du Château in Beaucourt-en-Santerre, has roots dating back generations and since 1660, when the family has been growing grain. The distillery has produced whisky and gin as 100% French products since its founding and emphasizes terroir and craftsmanship. Everything happens at the distillery—from field to glass—and barley is grown on the family-owned land that participates in the entire process. The production uses a Stupfler-alambic and aging takes place in various types of new and previously used casks that have contained cognac, rum and great wines to add depth and complexity. There is an emphasis on an eco-responsible approach and architecture that underscores sustainability and local raw material use. The history includes parcels such as Hangard, located near the Somme Front during the First World War, which gives a historic dimension to the Single Farm series. The aim is to highlight terroir, tradition, and French craftsmanship through a range of single malt whiskies and related experiences.
Production / Manufacturing
Du champ à la bouteille describes the entire production process: barley is grown on the family-owned field, malting and processing of the raw material take place in small batches using a Stupfler-alambic, and distillation occurs in small volumes. Fermentation occurs at a relatively high temperature (around 25°C) and yields about 8% ABV as the starting alcohol. After distillation, aging follows in different types of wood casks – including new French casks and casks that previously held cognac, rum or wine – to give depth and complexity. The distillery aims to preserve the heritage through three years of aging as a baseline and offers non-filtered or natural color at bottling. All aging and production take place at the distillery – part of their eco-responsible approach, including architectural details such as the use of local wood and the reuse of co-products.

- Harvest 2017 – Parcel Hangard – Condrieu finish – €59.00 VAT included; Appearance: pale gold. Nose: malt, cereals, floral. Palate: rich, dry, woody. Finish: Condrieu finish adds fruitiness and complexity.
- Harvest 2018 – Parcelle Parc du Château – PX finish – €59.00 VAT included; Appearance: aged gold. Nose: ample, blond tobacco, soft oak, spices and PX notes. Palate: rich notes with toffee and raisins. Finish: rich and long.
- Harvest 2019 – Parcelle Le Bout de la Ville – Sherry & Rivesaltes finish – €59.00 VAT included; Appearance: aged gold. Nose: gourmand. Palate: aromas of hazelnuts and hay-like notes; Finish: lightly oxidative from Rivesaltes.

Visits and Experiences

- Whisky Workshop – €90 per person. Involves a visit to the factory, tasting and assembling your own final single malt single farm whisky, which you take home in a small bottle as a keepsake.
