History
Origin
The Sivó family came in the early 20th century from Hungary and produced remarkable fruit brandies in their village. Although the equipment was simple, their craft was recognized across the country. Today, Maison Sivo is in Montérégie and uses microdistillation with a focus on the highest quality, which established the Sivó family's reputation.

Production/Manufacturing
Maison Sivo is a micro-distillery that distills in small batches and places a premium on high quality. They tailor Quebec Single Malt and Rye without gimmicks, using only carefully selected grains and small-batch distillation, which are then aged in lightly toasted oak barrels, where wood, grain and time meet to create a balanced spirit. Aroma-Still captures the essence of blueberries, raspberries and blackberries and conveys it to brandies and liqueurs. Organic farming and an environmentally conscious approach are part of the philosophy and product development.

Whisky
- Le Single Malt Sivo: distilled from locally Québec-malted barley and aged in new oak barrels, finished in Sauternes casks. No colorants; a powerful, robust and elegant whisky with fruity aromas. The Sauternes finish provides roundness and notes of candied fruit and pastry.
- Le Rye Whisky: distilled from locally Québec rye (2/3) and malted barley (1/3). Aged in new European oak casks of medium-to-high toast (225 L) and finished in Port wine casks. No color added; spice and pepper; finish in Port cask yields fruity and roasted notes.
- Moonshine du Rye Rebel: two-thirds rye and one-third barley; champagne yeast and spring water from Covey Hill; micro-distillation in a pot still to preserve the grain's aromas; silky-smooth with notes of pear and peach and a touch of pepper.
- Sélection Single Malt: The Sivo Selection series is drawn from the most prestigious batches and aged in unique casks; since producing their first whisky in Québec in 2015, they have kept their best casks for connoisseurs; complex and rare.
- Sélection Rye Whisky: selected from the most prestigious batches and aged in unique casks; since 2015; complexity and character.

- SHÁMÁN: bitter herbal liqueur with roots in Bavarian monasteries; high alcohol content and low sugar; served cold or in cocktails.
- Valkyrie: aquavit with botanicals; aromas of coriander, caraway and fennel and a hint of sweet fruit; enjoyed neat or in cocktails.
- Raspberry eau-de-vie: raspberry eau-de-vie from local raspberries; clean, delicate and long finish; can be served cold or at room temperature and used in cocktails.
- Rhubarb liqueur, Raspberry liqueur, Peach liqueur: liqueurs without colorants or added flavors, concentrated around the fruit; digestif or as ingredients in cocktails.
- SIVO fruit liqueurs: cherries, blueberries, blackberries and raspberries from their own fruit in Franklin, Québec; fermentation and maceration without water or additives.

Ecology and Farming
The Sivo farm's organic approach seeks to keep the interplay between organisms and the environment in balance and minimize its footprint on Earth. Selecting berry varieties with high natural sugar content reduces the need for added sugar and paves the way for distinctive handcrafted production without harming the environment.
