History

Distillerie de Montréal was established in 2013 in Montreal's Rosemont district. Behind the project are two friends, Lilian Wolfelsberger and Stéphane Dion, who share a passion for distillation and innovation. They are described as pioneers in Quebec and are known for working with Charentais double-distillation alembic stills. They were among the first in Canada to ferment and distill their entire range of spirits themselves, including rum that is entirely produced in Quebec. Their work is driven by a combination of tradition and new thinking, and their products have earned numerous international awards.

Production / Manufacturing

All products are made on-site: fermentation, maceration, distillation, aging and tapping take place. Distillerie de Montréal is one of the few in Quebec that fully ferments and distills every alcoholic product. They use Charentais double-distillation alembics, and the heart of the distillate is selected through a slow, two-stage high-heat process, which yields purity and aromatic finesse. The ingredients are central—natural aromatics from Quebec or globally—and the products age in various oak casks (American, French and Hungarian) with varying toast levels.

Whisky Series / Production and Character

Our Whisky de Montréal – 3 Years is a 100% Quebec whisky, micro-distilled in small batches. Fermentation is followed by a double distillation in a Charentais alembic, which gives a soft, non-heated mouthfeel. The subsequent aging takes place in American, French and Hungarian casks of varying toast levels for 3 years, after which a blend is created without the addition of sugar or caramel. Aroma is clean, woody notes with vanilla and caramel dominating, and the whiskey can be enjoyed neat, on the rocks, or as a base in cocktails.

Visits / Experiences

Distillerie de Montréal offers tours and workshops: a tour of the facility and tasting of 12 products, and the session lasts around 3 hours. Price around $40 per person, exclusive of tax. There is also a Cocktail Workshop for corporate groups and a restaurant in partnership with the distillery (La Part des Anges), which offers handcrafted cocktails.
