History
1769 Distillery is Montreal's first modern small-batch craft distillery and a destination for award-winning spirits in Quebec. Located at the historic Seagram distillery site in LaSalle, they have been handcrafting gin, whisky, and vodka since 2014. It is a family-owned distillery where the founders and their children are involved in the creation, distillation, and bottling of spirits from start to finish. Production / Manufacturing
1769 Distillery has various types of equipment, including continuous column distillation equipment and hybrid pot-stills, used to create their product range. The Constance continuous still produces a neutral base spirit at 95% ABV in a single pass, and they already reuse fermented products such as beer, wine, or cider to achieve a neutral base spirit in a circular ecosystem. This yields a 100% neutral base spirit, sourced locally from Quebec, and reduces waste by saving distillation time and avoiding waste of raw materials.
Isabelle, Hybrid Pot Still #1, is the main still for gin production and ensures clean smoke and aroma profiles using copper in the steam path. It was manufactured in Alabama by Artisan Still Design. Hybrid Pot Still #2, Madison, is used for our Canadian whisky and is also expected to distill rum later. Madison holds 580 liters in the kettle and is steam-driven; it is 100% Canadian-made and was produced in Alberta by Artisan Still Design. Gin equipment and copper columns help remove sulfur compounds and support gin production.

GinLab and Tours

Participants meet the distiller, receive a tour of the stills, prepare their own gin with botanicals, and learn to manage cuts (heads, hearts, tails). After distillation, participants enjoy a tasting experience in a tasting room, ending with tasting notes and a surprise gift. Quebec law prohibits participants from keeping their gins made during the workshop.
