History
- Location in Unterfranken, about 20 km north of Würzburg, where the Kropp-Schönland family runs Binsfelder Gut.
- The farm and the surrounding nature are described as an organic bio-farm, which since 2008 has been run by Sybille Kropp-Schönland under organic principles with a focus on respectful treatment of animals and natural resources.
- A long family history linked to the farm is described in the historical section, and it is noted that the garden and property have been in the family’s ownership for generations since the 1600s, with many details about how the property has passed from ancestors to the current owners.
- Organic certification and a focus on biodiversity and animal welfare are central to the operation.
Production / Distilling
- The distillery produces various schnapps each year in small quantities; they work together as a family, with friends and acquaintances to produce the selected distillates.
- The Brennretten (license to distill spirits) has historical roots dating back to the 19th century; the farm has a license to produce alcohol (300 liters of wine spirit) and has maintained this right since that time.
- The production includes a range of distillates such as Wildkirsche (Wild Cherry), Apfel (Apple), Zwetschge (Damson), Quitte (Quince), Steinobstler (stone-fruit distillate), Williams Christ Birne (Williams Christ Pear), Birne (Pear), Mirabelle, Quitte Speierling (Quince Speierling), Traubenbrand (Grape Brandy), Himbeerbrand (Raspberry Brandy), Himbeergeist (Raspberry Spirit), Haselnussgeist (Hazelnut Spirit), Whisky Single Malt and Weinbrand (Weinbrand).
- All distillates are produced in small quantities and sold in 0.5 L bottles; price lists and further information are provided upon request.
Products / Whisky Series
- Whisky: Whisky Single Malt is part of the distillate range and is presented as part of the curated collection of products, which also includes a range of fruit and nut distillates as well as Weinbrand.
- The composition of the distillates in the collection ranges from fruit distillates to more traditional spirits such as Weinbrand and Whisky Single Malt.
Visits / Experiences
- Gaststätten Schwarzer Adler offers opening hours by appointment and can be rented for small events; there is the option to host events in a guest cellar and in large halls.
- Group tastings of schnapps and whisky are available by appointment with Stefan Schönland.
Philosophy
- Organic farming since 2008: the operation focuses on sustainability, animal welfare and responsible resource management.
- Preservation of nature and biodiversity through nature care and grazing practices, including grazing management of Magerrasens on Muschelkalk, which is explicitly encouraged by the nature protection authorities to preserve open slopes and biodiversity.
- The farm values community and openness, with the family contributing to local collaborations and networks within agriculture, brewing and gastronomy.
