Historie
- The Waters Distillery is a family-owned distillery in Pforzheim, Germany. The natural major advantage of Streuobstwiesen and a down-to-earth tradition form the basis for the small-batch approach that characterizes the company. The third-generation farm was taken over in 1959 by Helmut Burghardt and expanded into a full-time operation with a Kleinbrennerei. In 1975 an agricultural Brennrecht was acquired, enabling the production of Kornbrände from local grain varieties. In 2008 Ursula Waters joined and further developed the experience; she also pursued further education at viticulture- and distilling-schools.
- In 2012 the first casks of Limousin oak with their own grain brand were laid in the natural cellar. This was followed by several more casks over the years. The true focus on nature, sustainability and respect for the environment is shared as core values in the production.
- In 2017 the first Limousin oak cask was opened and bottled as Fassabfüllung in 255 numbered bottles. Ursula and Kevin Waters, who run the company today, continue the tradition of offering Edelbrände, Fruchtschnäpse, Liköre, Gin and Whisky.
- The range emphasizes the use of regional, self-harvested and hand-selected fruit. The old fruit varieties yield less alcohol, but more spice and aroma, contributing to an authentic character in their distillates. The gin combines botanicals from Cornwall's coastal- and moorland areas with alcohol from local Streuobst fruits.
- The Schnapspralines are an annual edition in the spring and at Christmastime, and you can stay updated via newsletter or social media.
Produktion
- In the small distillery only regional, self-harvested and hand-selected fruit is used, which is mashed and placed in maturation casks. Fermentation converts fruit sugars to alcohol, and aroma compounds are released during the process. After an appropriate maturation period the fermented must is slowly distilled at 80–90°C, where the fusel residues (heads and tails) are separated from fusel-containing parts and further processed into Edelbrände.
- Fruchtschnäpse are formed by combining the selected Edelbrand and fruit residues over a period, creating a fruity Edelbrand of around 30% vol.
- Liqueurs are infused with flowers, fruits and berries in alcohol and sugar over months to develop color and flavor.
- Gin is made by gathering flowers and herbs along the coast and in moorland areas (Cornwalls), blended with 15 botanicals and juniper in pear mash and distilled slowly, giving a regional fruit component.
- Whisky: Since 1975 Kornbrand has been produced from regional grain; the first Limousin oak cask was added in spring 2012, filled with the best Mittellauf and stored in the natural cellar. In November 2017 the cask was opened and bottled as Fassabfüllung in 255 numbered bottles.
- The Schnapspralines are handmade pralines, sold annually in Christmastime.

Besøg / Oplevelser
- The company runs an online sale, but the webshop is under construction; orders are received by e-mail. Delivery usually takes place with Deutsche Post within five business days, and there is also the option for pickup in Würm by appointment.
- The delivery area is Germany; shipping costs are €6.00; payment is by bank transfer. At pickup in Würm payment can be made in cash.
- Opening hours (season): Wednesday 10–18 and Saturday 10–14. Address: Ritterstraße 6, 75181 Pforzheim Würm. Note: the stated mailing address is only the production site and not open permanently; visits outside opening hours require an appointment.
