History
- Martin Wagner founded Sächsische Spirituosenmanufaktur in Kirschau (Oberlausitz). He is described as an experienced brewer and maltster who set out to create Saxon spirits and developed the project around craft and regionality.
- Since then there have been clear partnerships and workflows, including mash production in collaboration with Bergquell Brauerei Löbau and distillation in Kirschau, underscoring regional cooperation and a craft-oriented approach.
- The company culture seeks mutual regional support and emphasizes naturalness, quality, sustainability, and craftsmanship. The motto is quality over quantity.
- A 360° tour is offered, providing insight into production from fruit intake to bottling, as well as YouTube content to give customers insight into the manufactory.
- In addition to production, the company offers Weihnachts-Hofladen & Genuss-Nachmittag, corporate presentations and the possibility of delivery through its own online shop, as well as theoretical and practical information about spirits concepts and various product categories.
Production and Manufacturing
- Raw materials and philosophy: The production process is based on regional fruits, flowers, herbs and spices without additives, with a focus on naturalness and regionality.
- Mash and fermentation: The mash is often produced using infusion mash method; fermentation proceeds slowly over about two weeks at low temperature, resulting in a clean and mild base (about 9% alcohol in the fermentation liquor at the end of fermentation).
- Distillation: Whisky is traditionally distilled three times in pot stills (600 L raw spirit production and 200 L fine-spirit system). This results in a mild, aromatic base spirit without using too many successive fractions.
- Maturation and water: Whisky matures in Lausitzer Granite cellars with consistently cool temperatures and high humidity (around 15°C, 80–95% relative humidity). After maturation the distillate is blended with Oberlausitzer water to achieve the desired drinking strength. Filtration occurs only to the extent necessary to preserve the full whisky expression.
- Cask and finish: The cask aging includes a range of different oak varieties – Bourbon (American white oak), French red wine, port, sherry, and various special casks including fruit wines and beers, etc. A common thread in the production is the use of only fresh, unused casks when aging.
- Handcrafted and unique: The bottles are handcrafted, not cold-filtered and without coloring; there is emphasis on preserving as much of the original flavor as possible (minimal filtration).
