History

Number Nine Spirituosen-Manufaktur GmbH is based in Worbis, Thuringia, and presents itself as a true manufactory, where modern techniques meet tradition. They describe that their distillates for whiskey are produced under high master-distiller standards and a close dialogue between distillers and management in Fassmanagement, which is a top-management concern. Bottling is done by hand and numbered, and the alcohol will not be colored or cold-filtered. Their online shop is open, and the products can also be purchased through Whiskywelt Burg Scharfenstein or through partner retailers. They also highlight a historical connection to Eichsfeld's spring water and a tradition of over 150 years in the region, underscoring their focus on regionality and craftsmanship.

Production and Manufacturing

Distillation Process

The distillation takes place in two stills (1,500 L and 500 L), after which the spirit undergoes a multi-year aging in selected oak casks. Fassmanagement is a central part of their workflow and is considered a top-management matter.

Barrel Aging and Cellar Philosophy

Aromas are naturally rounded through Fass-management and hand bottling; no colored or cold-filtered product is the norm for No.9. They produce in small batches and every bottle is hand-filled and numbered, underscoring a manufactory approach with a focus on quality and craftsmanship.

Seasons and Approach to Raw Materials

The malt selection consists of various house malt varieties, and emphasis is placed on preserving fruity and complex aromas throughout the process. Open fermentation and close cooperation between distillers and the master distiller contribute to a high aromatic profile in the bottlings.
