History

Höllberg-Brennerei has roots in the Black Forest and is a family-owned distillery. According to the company's descriptions, it originates from traditional fruit farming in the Black Forest region and the Middle Baden fruit traditions. The distillery was established in a form that was later carried on through generations, and since 1922 the family has run the business. The current leadership is listed with Daniel Walter as the person responsible in the company under the registered name Carl Walter, Höllberg-Brennerei.

The whiskies and the other beverages are produced using traditional methods: the use of unmalted grain, double distillation, and aging in several different aging forms. Black Forest Whisky 2012 (43% vol.) is described as a Single Grain Whisky, made from unmalted grain and then aged for at least two years in stoneware vessels, followed by an additional 10–12 years in white wine, Chardonnay, Weißburgunder and Grauburgunder barrels, as well as lightly toasted new oak barrels, which impart roasted notes and vanilla. The long aging and the use of different cask types give a mild and fresh aromatic profile with fine vanilla and fruit notes as well as roasted hints. The distillery operates on a philosophy of high quality, small batches and craftsmanship without additives, and there is emphasis on regional raw materials from Baden and Südtirol (Italy).
